Perfect Birthday Pork Rib Roast Recipe
Dear Friend,
Surrounded by my 3 children, brother, mother, and dear friends, I knew what I wanted to make for them for my birthday.
It was inspired by the movie, based on the book, The Guernsey Literary and Potato Peel Pie Society. I know it’s a delicious mouthful, just like this pork rib roast.
Scene- Living on the bucolic British Crown Isle of Guernsey, occupied by Germans during World War II, a small group of locals form a secret society, one evening feasting on the last piece of pork not confiscated by the invaders.
Watching the scene over and over, as the pork is brought to the table, crusted and crackling, juices melting out as they carve, I’ve fantasized about making this dish ever since.
Because a recipe doesn’t appear in the book, I patched together my own. See recipe and reel below…

Dijon-Herb Crusted Rack of Pork
YOU’LL NEED
▢ Bone in pork rib roast (ask your butcher to French and tie)
▢ Dijon mustard @moutardemeauxpommery
▢ Dried rosemary
▢ Dried thyme
▢ Extra virgin olive oil @getgraza
▢ Kosher sea salt @labaleineusa
▢ Preserved Meyer lemon @buyifandwhen
TO PREPARE
- Salt pork heavily day before. Refrigerate uncovered
- Several hours before cooking, remove from fridge, mix all other ingredients, forming emulsification. Smother lovingly over pork
- Place probe thermometer in center of meat. Blast in 500°F oven for 15 minutes. Turn oven down to 300°F, and cook until 135°, about 15 min per pound. Remove and let rest 15 min. It will continue to cook, reaching approx 145°F, medium.
- Slice down through bones, serve, watch your guests faces.
