Less Stressful, More Delicious

My brother comments, “Pete, you’re so organized and not stressed when we’re cooking. How?” (see our cooking reels)

What helps me be less stressed, and less messy, is to set my mise en place with a mirepoix.

Mise En Place- French culinary term meaning “everything in its place” that refers to the process of gathering, prepping, and organizing all ingredients and equipment before cooking.

Mirepoix- a French flavor base made from a mixture of diced onions, carrots, and celery, typically cooked slowly in fat like butter or oil.

I prepped this mirepoix as the base for split pea soup 🍜. (See reel above)
