Recipe- How to Cook Fire 🔥 Kissed Branzino
“I don’t know how to cook fish?” I confessed to my friend’s father from the old world.
“What? It’s so easy,” he said. Then he showed me.
Truthfully, before then, it intimidated me.
Now I see it as one of the simplest, most delicious dishes I can serve the people I care about, saving at least US$30 per fish by preparing it at home.
I forgot to ask the fishmonger at @wholefoods to scale and gut the fish while leaving the heads on. (Ask your fishmonger to do this for you. They’ll be happy to.)
So when I got home I looked up a quick #youtube video, and did a passable job of it.
I buy my fish from Whole Foods as well as local fishmongers because I want the healthiest, most sustainable fish to feed my family. Otherwise, I don’t see the point of eating fish.

INGREDIENTS
Whole Branzino (also known as Mediterranean Sea Bass, Loup De Mer in France, Lavraki in Greece)
Gremolata (marinade and sauce)
garlic, whole bulb, peeled & chopped. I got mine from @deepdivefarm
extra-virgin olive oil, several cups and a few glugs. I used @iliada_olive_oil
Secret ingredient, 1 tbsp preserved Meyer lemon from @buyifandwhen
parsley, half a bunch, chopped coarsely
Kosher sea salt, several pinches, then 1 more. My fav is @labaleineusa
RECIPE
Prepare gremolata
Get grill blistering 🔥
Slather fish and lay on grill
Do not be tempted to flip it until at least 12 minutes pass. Flip
Grill another 7 to 10 minutes.
Remove. Look up a video on how to fillet.
Slather with Gremolata, enjoy.
COOK’s TIPS
I served with burnt broccoli (see reels) and butter lettuce salad
Cook the garlic for broccoli separate otherwise it will burn on the grill and then fall through the cracks.
Pro tip- stir in a teaspoon of @buyifandwhen preserved lemon with the garlic and oil after it cooks, then drizzle over broccoli.
